Vegetable-based Sauces

Bell Pepper Coulis

For this recipe, you need :

  • 1 red pepper
  • 10 cl whipping cream
  • salt, pepper
  • 1 knob of butter
  • cayenne pepper
  • 1 tablespoon tomato paste

Cut the peppers in pieces and put them in a large pot.

Season with salt, pepper and cayenne. Add the tomato paste and whipping cream.

Cook over medium heat, stirring frequently, until the peppers are completely cooked.

Mix the sauce as finely as possible. Use a food processor if you have one.

Filter through a chinois or fine sieve, packing. Season if needed. Let cook and keep refrigerated.
