Ingredients for Tomato Coulis :

  • 300 g tomatoes
  • 2 cl olive oil
  • 1 garlic clove
  • 1 shallot
  • 1 teaspoon tomato paste
  • 1 bouquet garni
  • 15 cl chicken stock
  • salt, pepper

Technical stages for Tomato Coulis :

  • Peel and seed the tomatoes.
  • Heat up the oil, and the garlic and chopped shallot, without browning. Add the tomatoes, tomato paste, bouquet garni and chicken stock.
  • Cook over medium heat for 20 minutes.
  • Add salt, pepper, and mix in a food processor.
  • You can use this sauce cold or warm.
