Ingredients for Custard :

  • 8 to 10 egg yolks
  • 250 g sugar
  • 1 litre milk
  • 1 vanilla pod

Technical stages for Custard :

  • Boil the milk with a vanilla pod spliced lengthwise.
  • In a second bowl, whisk egg yolks and sugar until light.
  • As soon as the milk starts boiling, pour on the yolks, whisking.
  • Transfer back to the pot you used to boil the milk and cook over low (gas stove) or medium (electrical) heat and keep stirring with a wooden spoon until à la nappe.
  • When finished, filter through a chinois sieve and transfer to a cold bowl, stirring frequently until fully cooled.
