Technical stages for Custard :
- Boil the milk with a vanilla pod spliced lengthwise.
- In a second bowl, whisk egg yolks and sugar until light.
- As soon as the milk starts boiling, pour on the yolks, whisking.
- Transfer back to the pot you used to boil the milk and cook over low (gas stove) or medium (electrical) heat and keep stirring with a wooden spoon until .
- When finished, filter through a chinois sieve and transfer to a cold bowl, stirring frequently until fully cooled.
