Creme Brulee

For this recipe, you need :

  • 8 to 10 egg yolks
  • 200 g sugar
  • 1 vanilla pod
  • 1 litre whipping cream
  • brown sugar

Prepare all the ingredients.

Whisk the eggs with the sugar until pale and foamy.

Extract the seeds from the vanilla pod with the tip of a knife, add to the mix and whisk thoroughly.

Add the cold whipping cream. Mix well.

Fill up 6 little creme brulee bowls.

Bake in preheated oven at 100°C (212°F).

The whole secret of the recipe is in the baking process. It must be slow, long and homogeneous. I recommend 1 hour at 100°C (212°F). When finished, leave to cool and keep refrigerated.

Before serving, sprinkle the surface with brown sugar and caramelize with a torch or a special creme brulee torch.
