Ingredients for Orange Flavoured Chiboust Cream :

  • 165 g whipping cream
  • 50 g orange juice
  • 1 orange peel
  • 130 g egg yolks
  • 15 g sugar
  • 17 g flour
  • 25 g gelatin in leaves
  • 10 g pear liqueur
  • 560 g italian meringue

Technical stages for Orange Flavoured Chiboust Cream :

  • Soak the gelatin in cold water.
  • Bring to a boiling point the cream with the orange zests.
  • Combine the egg yolks and sugar, and whisk until thick and pale. Add the flour.
  • Pour the warm cream onto the egg, sugar and flour mix and cook like pastry cream. Add the pear alcohol and the drained gelatin.
  • Meanwhile, prepare the italian meringue.
  • Mix the warm pastry cream and italian meringue.
  • Arrange immediately and let it set in the fridge.
