  • 250 g milk
  • 1/2 vanilla pod
  • 4 egg yolks
  • 50 g sugar
  • 2 leaves gelatin
  • flavour of your choice
  • Italian Meringue
  • 4 egg whites
  • 125 g sugar

Technical stages for Chiboust Cream :

  • Soak the gelatin in cold water.
  • Prepare a pastry cream with the ingredients specified above.
  • Combine the drained gelatin with the warm pastry cream.
  • Flavour to taste (vanilla, coffee, chocolate, or any kind of alcohol you like).
  • Prepare an italian meringue and combine with the cooled pastry cream.
  • Mold immediately and let it set in the fridge.
