Ingredients for Caramel Mousseline :

  • 400 g sugar
  • 1 litre milk
  • 4 eggs
  • 120 g flour
  • 250 g butter
  • 250 g whipped cream

Technical stages for Caramel Mousseline :

  • cook the sugar until you obtain caramel.
  • Solubilize with the milk. Warm up to allow the caramel to dissolve properly into the milk.
  • Combine the eggs with the flour, add the milk, and cook for about 5 minutes after a boiling point is reached.
  • Amalgamate the butter to the thickened cream.
  • Mix well. Let it cool.
  • At last, add the whipped cream.
  • Arrange and keep refrigerated.
