Technical Stages :
- Grill the hazelnuts in a pan without oil, break them in big pieces.
- Heat the cream with star anise in a saucepan or microwave.
- Peel and seed the pear and dice it.
- Cook the pear in a non-stick pan with hot butter and 1/2 spoon of sugar.
- Place in 2 ramekins.
- the egg yolks with a tablespoon of sugar.
- Remove the star anise from the cream and add it to the egg yolks while whisking.
- Coat the diced pear, leave to cool, then place the ramekins in the fridge.
- Just before serving, turn on the broiler of the oven.
- Sprinkle the ramekins with brown sugar and pass under the broiler until caramelized.
- Sprinkle with pieces of hazelnuts and serve.
