Pear Cream

Ingredients for Pear Cream :

  • 1 large pear or 2 small ones
  • 30 g peeled hazelnuts
  • 2 egg yolks
  • 20 cl liquid cream
  • 15 g butter
  • 1.5 tablespoon sugar
  • 2 tablespoons brown sugar
  • 1 star anise

Technical stages for Pear Cream :

  • Grill the hazelnuts in a pan without oil, break them in big pieces.
  • Heat the cream with star anise in a saucepan or microwave.
  • Peel and seed the pear and dice it.
  • Cook the pear in a non-stick pan with hot butter and 1/2 spoon of sugar.
  • Place in 2 ramekins.
  • Cream the egg yolks with a tablespoon of sugar.
  • Remove the star anise from the cream and add it to the egg yolks while whisking.
  • Coat the diced pear, leave to cool, then place the ramekins in the fridge.
  • Just before serving, turn on the broiler of the oven.
  • Sprinkle the ramekins with brown sugar and pass under the broiler until caramelized.
  • Sprinkle with pieces of hazelnuts and serve.
