Prepare all ingredients:
Grill the hazelnuts in a pan without oil, break them in big pieces.
Heat the cream with star anise in a saucepan or microwave.
Peel and seed the pear and dice it.
Cook the pear in a non-stick pan with hot butter and 1/2 spoon of sugar.
Place in 2 ramekins.
Cream the egg yolks with a tablespoon of sugar.
Remove the star anise from the cream and add it to the egg yolks while whisking.
Coat the diced pear, leave to cool, then place the ramekins in the fridge.
Just before serving, turn on the broiler of the oven. Sprinkle the ramekins with brown sugar and pass under the broiler until caramelized.
Sprinkle with pieces of hazelnuts and serve.
