Crêpes "levées" with Bell Peppers

For this recipe, you need :

  • 175 g flour
  • 4 red peppers
  • 1/2 yellow pepper
  • 250 g sheeps cheese
  • 1 onion
  • 2 eggs
  • 30 cl milk
  • 12 cl olive oil
  • sunflower oil
  • 1 sachet baker's yeast
  • oregano
  • salt
  • pepper

Technical Stages :

  • In a bowl, mix the flour, yeast, 2 pinches salt.
  • Add whole eggs, 3 Tablespoons olive oil and mix.
  • Add the milk little by little to obtain a thick smooth dough.
  • Leave to rest covered one hour.
  • Clean and seed the bell peppers.
  • Cut 100 g in strips and dice the rest.
  • Mince the onion.
  • Fry the diced peppers and the minced onion in a frying pan with 2 tablespoons olive oil.
  • Add salt and pepper and leave to steam 15 minutes.
  • Puree.
  • Fry the rest of stripped bell peppers for 10 minutes.
  • keep warm.
  • Cook 6 thick crêpes.
  • Garnish with coulis and stripped bell peppers.
  • Sprinkle with sheep cheese and oregano.
  • Serve hot.
