Crêpes "levées" with Bell Peppers

	1 Prepare all the ingredients.
	2 In a bowl, mix the flour, yeast, 2 pinches salt.
	3 Add whole eggs, 3 tablespoons olive oil...
	4 ...and mix.
	5 Add the milk little by little to obtain a thick smooth dough.
	6 Leave to rest covered one hour.
	7 Clean and seed the bell peppers. Cut 100 g in strips and dice the rest.
	8 Mince the onion.
	9 Fry the diced peppers and the minced onion in a frying pan with 2 tablespoons olive oil.
	10 Add salt and pepper and leave to steam 15 minutes.
	11 Mix.
	12 Fry the rest of stripped bell peppers for 10 minutes.
	13 Keep warm.
	14 Cook 6 thick crêpes.
	15 Garnish with coulis...
	16 ...and stripped bell peppers. Sprinkle with sheep cheese...
	17 ...and oregano.
	18 Serve hot.
