Technical stages for Crispy Cod :
- Boil the potatoes.
- Start in cold salted water.
- When boiling, cook until the potatoes feel soft enough for a knife to slice easily in.
- In a skillet, the garlic in a bit of olive oil.
- De-salt the cod for 24 hours in cold water, then and peel it.
- Puree the cooked potatoes.
- Add the egg yolk, cod and seasoning (be gentle with the salt, as the cod is already salty).
- Mix thoroughly.
- Prepare the breading ingredients (egg yolk, flour, breadcrumbs).
- Make little balls with the potato .
- Roll them in flour, then egg yolk and finally in bread crumbs.
- Repeat for every little ball.
- for a few minutes in hot frying oil.
- When golden, drain on paper towels and serve immediately.
