Dariole of Potatoes with Vegetables
Technical Stages :
- Cook the potatoes .
- When finished, drain and leave to cool.
- Cut them in pieces and dry them for a few minutes in the oven.
- Crush them using a fork.
- Add the crème fraîche, butter, and grated cheese. Season with salt, pepper and nutmeg.
- Fry the ratatouille in a frying pan.
- Add the shredded tuna. Adjust seasoning and add a bit of olive oil and crumbled thyme.
- 4 ramekins with parchment paper.
- Place alternatively a layer of potato purée and a layer of cooled tuna ratatouille.
- Refridgerate for 1 hour.
- Heat the tomato coulis...
- Add a bit of olive oil and chopped garlic. Adjust seasoning.
- Dress the darioles in the center of each plate when removed from the molds and add a stream of tomato coulis all around. Decorate with a sprig of dill.
- Serve immediately.
