Ingredients for Dariole of Potatoes with Vegetables :

  • 400 g potatoes
  • 300 g frozen vegetables for ratatouille
  • 100 g tuna packed in water
  • 10 cl crème fraîche
  • 50 g grated cheese
  • 20 cl tomato coulis
  • 2 tablespoons olive oil
  • 30 g butter
  • 1 garlic clove
  • thyme
  • nutmeg
  • salt
  • pepper
  • dill

Technical stages for Dariole of Potatoes with Vegetables :

  • Cook the potatoes à l'anglaise.
  • When finished, drain and leave to cool.
  • Cut them in pieces and dry them for a few minutes in the oven.
  • Crush them using a fork.
  • Add the crème fraîche, butter, and grated cheese. Season with salt, pepper and nutmeg.
  • Fry the ratatouille in a frying pan.
  • Add the shredded tuna. Adjust seasoning and add a bit of olive oil and crumbled thyme.
  • Line 4 ramekins with parchment paper.
  • Place alternatively a layer of potato purée and a layer of cooled tuna ratatouille.
  • Refridgerate for 1 hour.
  • Heat the tomato coulis...
  • Add a bit of olive oil and chopped garlic. Adjust seasoning.
  • Dress the darioles in the center of each plate when removed from the molds and add a stream of tomato coulis all around. Decorate with a sprig of dill.
  • Serve immediately.
