Braised Endives

Ingredients for Braised Endives :

  • 4 endives
  • 20 cl chicken or beef broth
  • 30 g butter
  • 1 small onion
  • salt
  • pepper
  • chopped parsley

Technical stages for Braised Endives :

  • Peel the endives, removing the outer leaves if they are are or look bad. Cut off the base.
  • Halve them lengthwise, wash under cold running water and drain.
  • Peel, wash and the onion.
  • Melt the butter over low heat in a baking dish and the onion without letting it brown. It must be soft and translucent. Add the endives and cook them on both sides until golden.
  • Season with salt and pepper to taste. Take away from heat and pour the broth. Cover with a lid or aluminium foil and bake at 180°C or 356°F for 35 minutes.
  • Serve warm in the baking dish, and sprinkle with parsley.
