  • endives
  • lemons
  • butter
  • chopped parsley

Technical stages for Endive Meunière :

  • Boil the endives in lemoned water for 40 to 50 minutes.
  • Drain and press to extract all water. Put them in a pan and in butter. Let them get slightly golden on one side, then flip and do the same on the other side.
  • Season and sprinkle with chopped parsley.
  • Pour beurre meuniere on top just before serving.
