Ingredients for Lamb FilletDressed with Potatoes :

  • 1 kg potatoes
  • 4 fillets of lamb 100 g each
  • 1 egg
  • 1 bunch parsley
  • 3 Tsp breadcrumbs
  • 10 cl white wine
  • 1 cube poultry stock
  • salt
  • pepper

Technical stages for Lamb FilletDressed with Potatoes :

  • Peel the potatoes, wash them and roughly grate them.
  • Blanch them for 2 minutes in boiling salted water.
  • Drain.
  • Add salt and pepper to the lamb fillets.
  • them both sides in a frying pan.
  • When well browned, remove them and set aside.
  • Dry the potoatoes between two dry tea towels.
  • In a salad bowl, beat the egg.
  • Season.
  • In a pan, fry 4 potato galettes for about 15 minutes on one side only.
  • When finished, drain and leave to cool.
  • Mix chopped parsley with breadcrumbs.
  • Roll the lamb fillets in this and wrap them in the potatoes galettes.
  • Bake in hot oven (180°C) for about 15 minutes.
