Candied Ginger and grapefruit Flan
Technical Stages :
- Peel a small 2 cm long piece of ginger and cut it in sticks.
- Place these sticks in a saucepan with 20 cl water and 100 g sugar. Bring to a boil and leave the ginger to candy for 15 minutes on gentle boil.
- Remove from heat and leave to cool.
- Mince the strawberries and sprinkle with sugar.
- Thinly slice the mint leaves onto the strawberries.
- Leave to marinate.
- Press the grapefruits and pour the juice in a saucepan.
- Add the rest of the caster sugar and place on low heat. Do not boil!
- Whisk the eggs along with the starch and add the warm grapefruit juice.
- Add the sticks of ginger, some strawberries and mix well.
- Divide the mixture in ramekins and cook in bain-marie for about 30 minutes.
- When finished leave to cool and serve with marinated strawberries.
