Candied Ginger and grapefruit Flan

	1 Prepare all the ingredients.
	2 Peel a small 2 cm long piece of ginger...
	3 ...and cut it in sticks.
	4 Place these sticks in a saucepan with 20 cl water and 100 g sugar. Bring to a boil and leave the ginger to candy for 15 minutes on gentle boil.
	5 Remove from heat and leave to cool.
	6 Mince the strawberries...
	7 ...and sprinkle with sugar.
	8 Thinly slice the mint leaves onto the strawberries.
	9 Leave to marinate.
	10 Press the grapefruits...
	11 ...and pour the juice in a saucepan.
	12 Add the rest of the caster sugar...
	13 ...and place on low heat. Do not boil!
	14 Whisk the eggs along with the starch...
	15 ...and add the warm grapefruit juice.
	16 Add the sticks of ginger, some strawberries and mix well.
	17 Divide the mixture in ramekins...
	18 ...and cook in bain-marie for about 30 minutes.
	19 When finished...
	20 ...leave to cool and serve with marinated strawberries.
