Prepare all the ingredients (bones, vegetables, etc..)
Crush the bones in small pieces. Put them in a pot. with cold water. Bring to a boiling point. . Let boil for 2 minutes.

Cook slowly without the lid on for 2 h 30 to 3 hours apporximately.
Gently filter through a or fine sieve as soon as it is finished.
