Galette with Walnut Cream

Ingredients for Galette with Walnut Cream :

  • 600 g puff pastry
  • 1 egg yolk
  • 1 Tsp icing sugar
  • Walnut cream:
  • 100 g softened butter
  • 200 g walnuts
  • 200 g sugar
  • 2 eggs

Technical stages for Galette with Walnut Cream :

  • Walnut cream:
  • Chop the walnuts.
  • Whisk butter and sugar.
  • Add the eggs one at a time and then the chopped nuts.
  • Roll out the puff pastry into 2 similar rolled out pieces.
  • Place the first rolled out pastry on a slightly greased baking sheet.
  • Spread walnut cream on it.
  • Brush the sides using eggwash.
  • Cover with the second rolled out pastry.
  • Seal the sides by pressing with your finger tips.
  • Cut the sides in pointed tips.
  • Leave in the fridge for half an hour.
  • Using a brush, glaze the surface of the galette.
  • Sprinkle the whole surface of the galette with icing sugar.
  • With a knife tip, draw leaves or flowers.
  • Bake in hot oven at 210°C for 10 minutes then lower to 180°C and bake another 35 minutes.
  • Serve warm.
