Technical stages for Saffron Pumpkin Galette :
- Peel the pumpkin and remove the seeds.
- Roughly grate the flesh.
- Thinly slice the chervil.
- In a bowl, beat the eggs. Add salt and pepper.
- Add the chopped pumpkin, minced chervil and saffron.
- In a frying pan, heat 60 g butter.
- Place 4 large spoons of the preparation in the hot butter.
- Slightly flatten them using the back of a spoon.
- Leave to fry and brown 5 minutes each side.
- Reserve the galettes in warm oven until serving with a grilled meat.
