Gaspacho

For this recipe, you need :

  • 1 cucumber
  • 1 red pepper
  • 1 green pepper
  • 1 kg of tomatoes
  • 4 pods of garlic
  • 1 onion
  • 250 g of bread crumbs
  • 1 dl of olive oil
  • 4 dl of chicken stock
  • 1 dl of wine vinegar
  • Salt
  • Pepper
  • Hot Cayenne pepper

Technical Stages :

  • Clean, wash and cut the vegetables.
  • Mix them with the olive oil, salt and pepper.
  • Mix the white chicken stock and the vinegar.
  • Soak the bread crumbs in it.
  • Macerate 2 hours in the fridge.
  • Mix the whole in a blender.
  • Adjust the seasoning and add a pinch of Cayenne pepper.
  • Serve frozen with cucumber brunoise, tomato and peppers and an ice cube to preserve all of this soup's freshness.
