Surprise Angel Cake

Ingredients for Surprise Angel Cake :

  • 12 egg whites
  • 1/4 teaspoon salt
  • 2 teaspoons cream of tartar
  • 1 teaspoon vanilla extract
  • 1.5 cups white sugar
  • 3/4 cup flour
  • 1/4 cup cornstarch
  • Filling:
  • strawberries, lemon, raspberries, cherries, etc...
  • Decoration:
  • whipped cream

Technical stages for Surprise Angel Cake :

  • Preheat the oven at 180°.
  • Sift together the flour, sugar and cornstarch and keep aside.
  • Put the egg whites, salt and cream of tartar in a large bowl. Beat the eggs whites until stiff.
  • Add the vanilla to the egg whites.
  • Combine very gently the flour and sugar mix to it, spoon by spoon.
  • Pour the preparation in a baking pan. Do not grease.
  • Bake for 30 to 35 minutes (until the cake becomes golden).
  • When finished, unmold on a plate and leave to cool.
  • Cut horizontally in three parts of equivalent size.
  • Fill up fruits (of your choice) between the layers while reassembling the cake.
  • Coat with whipped cream.
