Birthday Cake

For this recipe, you need :

  • Génoise:
  • 4 eggs
  • 120 g sugar
  • 120 g flour
  • Chocolate Mousse:
  • 140 g sugar
  • 210 g whole eggs
  • 1/2 litre liquid cream
  • 375 g dark chocolate coating
  • Raspberry Bavaroise:
  • 400 g raspberry coulis
  • 150 g sugar
  • 3 sheets of gelatin
  • 150 g liquid cream
  • Garnish:
  • 200 g fresh raspberries
  • Decor:
  • Chocolate coating
  • white almond paste
  • green almond paste

To make this birthday cake, you will first need to make a génoise with the ingredients mentioned above.

Bake the génoise dough on a greased sheet of parchment paper.

Bake in hot oven at 180°C for 10 to 15 m and leave to cool.

Make a chocolate mousse with the ingredients mentioned above.

Prepare the raspberry bavaroise with the ingredients mentioned above.

In a square stainless steel ring, place a layer of génoise. Coat the bottom of the square with raspberry bavaroise halfway up. Sprinkle the surface with fresh raspberries and finish with the chocolate mousse. Leave to harden in the fridge.

Cover the surface of the cake with the shavings.

Make a chocolate border by thinly spreading melted chocolate between two plastic wraps. Leave to harden and cut in pieces using a knife.

Remove the ring and stick these chocolate borders all around the cake.

Store in the fridge.

...and decorate its surface by slightly caramelizing it with a torch and writing "Happy Birthday" using a decorating cone filled with melted chocolate.
