Normand Cake

Ingredients for Normand Cake :

  • 6 rennet apples
  • 150 g melted butter
  • 200 g sugar
  • 1 small glass Calvados
  • 300 g flour
  • 5 eggs
  • 1/4 litre milk
  • 1 package baking powder

Technical stages for Normand Cake :

  • Cut the apples in thin pieces and soak them for an hour in a calvados + 25 g sugar mix. Whisk 100 g sugar with 75 g melted butter until pale. Coat the bottom and sides of a pan with this mix.
  • Align the apples slices in the pan. Whisk the egg yolk with the remaining sugar until pale and thick. Add then the flour and the baking powder. Slowly pour the milk and melted butter in, constantly stirring.
  • Beat the egg whites with a pinch of salt. Combine gently with the previous mix.
  • Pour the mixture on the apples. Bake at medium heat (160/180°C or 320/356°F) for about 40 minutes.
  • Check if the cake is baked by inserting a knife's blade in it: it should come out clean.
