  • 1 kg flour
  • 20 g salt
  • 250 g sugar
  • 225 g soft butter
  • 335 g eggs
  • 120 g milk + water
  • 30 g fresh yeast
  • rum
  • vanilla
  • orange flower water

Prepare all the ingredients.

Make a fountain with the flour and add the salt.

Warm up the water + milk mix and dissolve the yeast in it, stirring.

Pour the water + milk + yeast mix.

Mix with a wooden spatula.

Halfway through, add the orange flower water, the vanilla...

...and the rum. Turn into a homogeneous dough.

Cover with a plastic film and leave to rise for 48 hours in the fridge.

Glaze with an egg yolk mixed with some water.

Decorate the surface with candied fruits like here (orange peels and candied cherries, etc..)
