  • 4 eggs
  • 120 g sugar
  • 120 g flour

Technical stages for Sponge Cake :

  • Butter and flour a cake pan. Keep refrigerated. Putting butter and flour ensures an easy unmolding of the cake.
  • Mix in a metal bowl the eggs and sugar. Put the bowl in a bain Marie and whisk until pale and three times the original volume. It should take 10-15 minutes with a wired whisk and 5-10 minutes with a hand-mixer.
  • Take the mix out of the bain Marie and keep whisking until fully cooled. What you obtain is called "au ruban".
  • Combine gently with the flour, using a wooden spatula and trying not to let the mix fall.
  • Pour the dough in the baking pan and bake at 180°C or 356°F for 15 to 20 minutes.
  • Check if the cake is ready by inserting the blade of a knife in it: if it comes out dry, it is baked.
