Ingredients for Sponge Cake :

  • 4 eggs
  • 120 g sugar
  • 120 g flour

  • The batter must double in volume and turn really pale.
  • Away from the Bain Marie, whisk until fully cooled.
  • Add the flour.
  • Bake in a buttered and floured pan.
  • When finished, unmold on a rack and let cool.
