Technical Stages :
- Cut the boar belly into large cubes.
- Put the broth and wine in a large pot. Put on the stove. Add the meat, , vinegar, salt and pepper.
- Simmer over low heat for 2 hours, covered.
- Peel and slice the turnips. Put them in the stew and keep cooking for another hour uncovered, so that the sauce reduces.
- Add the meat glaze, bring to a boil for a few minutes. Season if needed.
- Arrange the meat on a warm service dish and put the pieces of turnip around. Coat it all with warm sauce.
