Coconut Ice Cream
  • For : 1 litre
  • Time : 1 hour
  • Difficulty : easy

For this recipe, you need :

  • 300 g sugar
  • 10 egg yolks
  • 1 litre milk
  • 100 g coconut
  • coconut milk

Technical Stages :

  • Whisk the eggs with the sugar until pale and thick. Dilute with the boiling milk and cook over low heat until it coats evenly your spoon.
  • Pass through a chinoiser, cool down, crush the coconut in coconut milk, combine with the cream and put in an ice-cream machine.
  • Keep frozen.
