Ingredients for Potato and Beans Casserole :

  • 500 g potatoes
  • 500 g green beans
  • 3 eggs
  • 1/2 cup grated parmesan
  • 2 tablespoons chopped parsley
  • 2 tablespoons chopped dill
  • black pepper
  • 1 cup fresh bread crumbs
  • 2 tablespoons olive oil

Technical stages for Potato and Beans Casserole :

  • peel and coarsely dice the potatoes. Boil them. Drain and purée.
  • Trim the beans. Boil, drain and finely chop them.
  • Mix the potatoes and beans with the beaten eggs, parmesan, parsley, dill and pepper.
  • Transfer to 6 buttered ramequins.
  • Sprinkle with bread crumbs mixed with olive oil and bake in medium oven (180°C or 356°F) for 30 minutes, until the surface is slightly golden.
