Ingredients for Liquorish Sour Cherries :

  • sour cherries soaked in kirsh (with stalks)
  • dark chocolate
  • white icing
  • chocolate vermicelli

Technical stages for Liquorish Sour Cherries :

  • Drain the soaked sour cherries. Don't pull off the stalks.
  • Dip the cherries in the white icing but do not coat the top of the fruit (where the stalk grows). Let dry.
  • Dip the sour cherries up to 1/4 from the end of the stalk in a dark chocolate that you'll have slightly melted beforehand. Drop then on a bed of chocolate vermicelli.
  • Leave to cool.
  • Let the cherries soak for 8 to 10 days before eating them.
  • NOTE:
  • With time, the white chocolate will melt under the dark chocolate and will turn liquorish.
