White Beans with Tomato Sauce
Technical Stages :
- Soak the dried beans in cold water.
- Drain and put them in a pot of cold water. Cook for 10 minutes. Drain.
- Cook them for an hour with two onions (with the cloves stuck in), carrot, one garlic clove, and the bouquet garni.
- If fresh, boil directly the white beans in the same manner.

- Add the tomatoes and tomato paste, the garlic, salt and pepper.
- Cover and cook for about 15 minutes.

- The tomatoes bring carotens, the olive oil brings polyinsaturated fatty acids, the beans have fibers.
