  • 1 kg green beans
  • 50 g butter
  • 50 g heavy cream
  • 1 egg yolk
  • salt

Technical stages for Green Beans à la Fermière :

  • Wash and string the green beans. Boil them for 15 to 20 minutes. Refresh and drain.
  • Melt the butter and cream over low heat.
  • Put the egg yolk in a bowl and pour th ebutter-cream mix, stirring vigorously.
  • Put back on th estove, constantly stirring and watch out that it doesn't boil. Pour on top of the beans, mix and serve immediately.
