Ingredients for Baked Ham :

  • 1 whole ham, about 3kg
  • 3 onions
  • 2 carrots
  • 6 cloves
  • 2 bay leaves
  • 1 thyme sprig
  • 1 bottle champagne
  • 1 glass brandy
  • pepper
  • water
  • 1 kg puff pastry
  • 1 egg (to glaze)

Technical stages for Baked Ham :

  • Cover the ham with water and desalt it for 12 hours, changing the water 2 or 3 times.
  • Pat dry and put in a large heavy pot.
  • Add the diced carrots and onions, cloves, bay leaves, thyme, champagne, brandy and pepper.
  • Moisten with cold water to the top of the ham. Bring to a boil and let simmer.
  • After an hour, take the ham out and remove the skin. Beware not to remove to much of the fat. Drain well.
  • Roll out the puff pastry and wrap the warm ham in it. You can use the extra pastry to make little decorations.
  • Do not forget to dig a chimney on top to allow steam to come out.
  • Glaze with egg yolk and bake in warm oven for about one hour.
  • Serve warm.
