Ingredients for Hunter-style Rabbit :

  • one 1.8 kg cut rabbit
  • 4 tablespoons oil
  • 30 g flour
  • 4 shallots
  • 200 g bacon dice
  • 4 garlic cloves
  • 30 cl dry white wine
  • 15 cl chicken stock
  • 2 tomatoes
  • 250 g white mushrooms
  • 1 bouquet garni
  • salt
  • ground pepper

Technical stages for Hunter-style Rabbit :

  • Peel the shallots and garlic, finely them.
  • Brown in oil in a pot. Add the pieces of rabbit and bacon dice. Brown on all side, then add flour. Stir with a wooden spoon to spread the flour.
  • with white wine and broth, add the bouquet garni, salt and pepper. Cover and simmer for 30 minutes over low heat.
  • Meanwhile, wash, peel and coarsely crush the potatoes. Remove the soiled stem from the mushrooms, wash and slice them.
  • Add tomatoes and mushrooms in the pot and cook for 20 more minutes. Season if needed and serve with fresh pasta.
