Pollack Slices with Oyster mushrooms

Ingredients for Pollack Slices with Oyster mushrooms :

  • 4 pollack slices
  • 600 g oyster mushrooms
  • 150 g butter
  • Fresh coriander
  • 1 lemon
  • salt
  • Pepper

Technical stages for Pollack Slices with Oyster mushrooms :

  • Make a marinade with the lemon, salt and pepper. Marinate the slices in the fridge for 15 minutes.
  • In a pan, heat a bit of butter and brown the slices both sides by turning them several times. Keep warm.
  • Fry cleaned minced oyster mushrooms in butter for about 5 minutes. Add salt and pepper. Remove the mushrooms and place them around the fish slices on warm plates.
  • Mix the mushroom juice left in the pan with the lemon juice and battre with butter. Reduce 1 minute on very high heat, then coat the mushrooms with this sauce. Garnish with a bit of freshly chopped coriander.
