  • 125 g almond powder
  • 250 g icing sugar
  • coffee extract
  • 100 g egg whites

Technical stages for Coffee Macaroons :

  • Whisk the egg whites with a pinch of salt until stiff.
  • Mix the icing sugar and almond powder with the egg whites.
  • Add the coffee extract.
  • with a pastry bag on a baking sheet covered with buttered baking paper. Let it sit for 20 minutes and sprinkle with icing sugar. Bake for 10 to 15 minutes at 160°C or 320°F.
  • When finished, put the macaroon sheets on a rack and leave to cool.
