Grand-Ma's Madeleines

  • Difficulty : easy

For this recipe, you need :

  • 125 g cream butter
  • 125 g flour
  • 125 g powdered sugar
  • 4 eggs
  • 1 lemon zest
  • 1 package vanillated sugar
  • salt

Technical Stages :

  • Whisk the butter and sugar until pale. Add the egg yolks one after the other, then the flour, vanillated sugar and zest.
  • Beat the egg whites with a pinch of salt until stiff. Combine gently with the previous mix, lifting the dough.
  • Pour in the buttered molds of the madeleine pans.
  • Bake in low heat 180°C or 356°F for 5 minutes, then 200°C or 392°F for 10 minutes.
  • Check out the color, which must be slightly golden on the sides.
