Technical Stages :
- Put the mussels in salted boiling water for 7 minutes. Remove those that did not open up.
- Cut the fish in 2cm pieces and the calamari into strips. Cut the tentacles in small pieces.
- Heat up the oil in a large pot, add the onion, carrots, celery and garlic, and cook for 4 minutes.
- Add the remaining ingredients except the fish and bring to a boiling point. Add the fish, but not the mussels, cover and simmer for 15 minutes.
- Remove the bouquet garni.
- Add the mussels, and pour on a warm serving dish. Decorate with coriander.
