Ingredients for Millefeuille of tomatoes with cucumber :

  • 4 tomatoes
  • 1/2 cucumber
  • 20 cl homemade mayonnaise
  • 1 red bell pepper
  • 1 green bell pepper, seeded
  • Espelette pepper or cayenne pepper (optional)
  • salt
  • pepper

Technical stages for Millefeuille of tomatoes with cucumber :

  • Cut the bell pepper in two, peel it and seed it.
  • Wash half cucumber. Slice 4 thin slices that will be used for decoration.
  • Peel it and dice it along with half green bell pepper.
  • Peel the tomatoes. Slice them each in 4 large slices. Add salt and pepper.
  • Using your blender, purée the red and green peppers.
  • Place the mixture in a fine sieve and leave it to drain. The purée must be relatively dry.
  • In a bowl, combine the mayonnaise, dices of cucumber and green peppers and the purée.
  • Add salt, pepper and hot pepper to taste.
  • Assemble the millefeuille: alternate slices of tomato and mayonnaise preparation.
  • Decorate the top with slices of cucumber.
