Biscayan Cod

Ingredients for Biscayan Cod :

  • 1 kg salt cod
  • 4 ripe, peeled and seeded tomatoes
  • 3 red peppers or a can of pimientos
  • 2 garlic cloves
  • chopped parsley
  • 1 glass dry white wine
  • 4 tablespoon olive oil
  • 1 tablespoons flour
  • 2 tablespoons tomato paste
  • salt, pepper
  • espellette pepper

Technical stages for Biscayan Cod :

  • The night before, soak the cod in cold water (skin side up), changing the water 3 or 4 times to de-salt it.
  • Dip the cod in a large pot of cold water and bring to a simmer; keep it there for three minutes without ever boiling.
  • Remove the fish, cut it in pieces, removing skin and bones. Set aside.
  • Pour the olive oil in a large terracota.
  • Sweat the minced garlic and onion, as well as the chopped parsley.
  • Add a tablespoon of flour. Mix well before adding the pieces of codm tomatoes and diced peppers.
  • Add pepper and chili pepper, but taste before salting. Reduce for 5 long minutes before adding the tomato paste and white wine.
  • Cook for an additional 10 minutes, then bake in the oven at 200°C or 392°F for 15 minutes.
  • Serve warm.
