  • One pineapple, about 1.5 kg

  • Peel the pineapple, remove the core and dice it.
  • Blend and filter through a chinois.
  • Transfer this puree into a bowl and freeze for 3 hours. Stir every 15 minutes in order to obtain a solide but light mousse.
  • Fill up individual glasses and serve immediately.
