Technical stages for Leek Mousseline :
- Peel and wash carefully the leeks. Cut them into pieces. Boil them until tender. Drain thoroughly to eliminate a maximum of water.
- Purée the leeks.
- Put the mashed leeks in a potm add the lemon juice and cook over low heat. Season with salt and pepper.
- Add the heavy cream and stir.
- Serve warm.
