Ingredients for Leek Mousseline :

  • 2 kg leeks
  • 200 g heavy cream
  • juice of 1 lemon
  • salt
  • pepper

Technical stages for Leek Mousseline :

  • Peel and wash carefully the leeks. Cut them into pieces. Boil them until tender. Drain thoroughly to eliminate a maximum of water.
  • Purée the leeks.
  • Put the mashed leeks in a potm add the lemon juice and cook over low heat. Season with salt and pepper.
  • Add the heavy cream and stir.
  • Serve warm.
