Technical stages for Lamb in Wine :
- Cook for 5 minutes in boiling water the diced pork belly.
- Sauté the baby onions and pork belly with a bit of oil in a large pot. Add the pieces of lamb cut in 5 cm-long (1,97 inches) squares.
- Let it brown.

- Add the wine confit, and let slowly simmer (covered) for 30 more minutes. Season if needed. Add a dash of paprika and serve warm with butter fried croutons.
