Ingredients for Lamb in Wine :

  • 1 kg spare ribs
  • 2 tablespoons oil
  • 200 g lean pork belly
  • 250 g baby onions
  • 125 g mushrooms
  • 2 glass red wine
  • 2 tablespoon flour
  • 1 tablespoon wine confit
  • salt
  • pepper
  • paprika
  • thyme
  • bay leaf
  • parsley
  • 2 tablespoons oil
  • 1 bouquet garni
  • white bread
  • butter

Technical stages for Lamb in Wine :

  • Cook for 5 minutes in boiling water the diced pork belly.
  • Sauté the baby onions and pork belly with a bit of oil in a large pot. Add the pieces of lamb cut in 5 cm-long (1,97 inches) squares.
  • Let it brown.
  • and stir. with warm wine and as much warm water. Stir.
  • Add the wine confit, and let slowly simmer (covered) for 30 more minutes. Season if needed. Add a dash of paprika and serve warm with butter fried croutons.
