Technical stages for Turnips and Bacon :
- Chose small turnips to cook them faster. Wash carefully, without peeling.
- Put them in cold salted water.
- Bring to a boil, lower the heat and simmer for about 20 minutes or until tender, but still a little firm.
- Drain, refresh under cold running water. Peel and cut in 1 cm (0,39 inch) dice. At the same time in a large pan, cook over very low heat the diced bacon, stirring frequently.
- After 5-6 minutes, add the finely onion. Cook for about 10 minutes until tender and slightly golden. Add the turnips.
- Sprinkle with parsley and serve.
