Turnips and Bacon

Ingredients for Turnips and Bacon :

  • 500 g turnips
  • 60 g smoked bacon
  • 1 big onion
  • 1 tablespoon chopped parsley
  • salt

Technical stages for Turnips and Bacon :

  • Chose small turnips to cook them faster. Wash carefully, without peeling.
  • Put them in cold salted water.
  • Bring to a boil, lower the heat and simmer for about 20 minutes or until tender, but still a little firm.
  • Drain, refresh under cold running water. Peel and cut in 1 cm (0,39 inch) dice. At the same time in a large pan, cook over very low heat the diced bacon, stirring frequently.
  • After 5-6 minutes, add the finely ciselered onion. Cook for about 10 minutes until tender and slightly golden. Add the turnips.
  • Sprinkle with parsley and serve.
