Technical stages for Caramelized Hazelnuts :
- Mix the almonds (ground or coarsely ground) with the boiling sugar.
- Keep for two hours away from the stove.
- Drain the hazelnuts and put them down on a baking sheet.
- Bake in a warm oven at 180/200°C or 356/392°F until caramelized.
- Turn from time to time to prevent them from burning.
- Spread out on a sheet of baking paper and leave to cool.
- Keep in a sealable plastic box.
