Ingredients for Caramelized Hazelnuts :

  • 300 g white hazelnuts
  • 90 g sugar cooked at 115°C

Technical stages for Caramelized Hazelnuts :

  • Mix the almonds (ground or coarsely ground) with the boiling sugar.
  • Keep for two hours away from the stove.
  • Drain the hazelnuts and put them down on a baking sheet.
  • Bake in a warm oven at 180/200°C or 356/392°F until caramelized.
  • Turn from time to time to prevent them from burning.
  • Spread out on a sheet of baking paper and leave to cool.
  • Keep in a sealable plastic box.
