For this recipe, you need :

  • 500 g powdered sugar
  • 400 g glucose (optional)
  • 400 g ground or sliced almonds

Technical Stages :

  • Prepare a dry caramel with the sugar and glucose.
  • Add the almonds as soon as the caramel reaches the desired coloration.
  • Mix well with a wooden spatula.
  • Pour on a slightly greased counter.
  • The nougatine is ready to be worked with.
