Technical stages for Nougatine :
- Prepare all the ingredients.
- Prepare a caramel with the sugar and glucose. To do this, put the glucose and the sugar in a skillet or copper sugar pot.
- Dry cook the sugar (without water) until browned.
- Stir the sugar in a circular pattern to give it a uniform color.
- When it reaches the desired color, add the almonds.
- Work well on the nougatine with a wooden spatula to combine the almonds fully.
- Meanwhile, quickly grease a rolling pin and the working area which must be clean and smooth. Pour on the greased counter.
- You can now work, and as you like.
- You must work fast before it gets hard. BEWARE: really hot!!!
- You can cut with a mincing knife as you wish. The nougatine is commonly used for decorative parts in wedding or party cakes, etc... and to decorate cakes in a sophisticated way.
