Hors d'Œuvres

For this recipe, you need :

  • 1 sliced loaf of white bread
  • 10 quail eggs
  • 1 dl of mayonnaise
  • ketchup
  • 1 table spoon of lumpfish roe

Technical Stages :

  • Prepare the sauce by mixing mayonnaise and ketchup. Correct seasoning if needed.
  • Boil the quail eggs (2/3 minutes maximum in boiling water). Cool, shell.
  • Toast the slices of white bread and once cooled, spread sauce on them with a spatula. Trim. Divide the slices in 2 or 4 pieces according to their size.
  • Put half an egg on the center of each piece. Decorate with a bit of caviar and a couple of ketchup spots made with a decorating bag.
