Ingredients for Goose with Chestnuts :

  • one goose, weighing about 3kg
  • 1 g chestnuts
  • 1 bay leaf
  • 1.5 litre white chicken stock
  • salt
  • pepper

Technical stages for Goose with Chestnuts :

  • Peel the chestnuts and them in the white chicken stock with the bay leaf.
  • Fill the goose with the chestnust. Close it with a trussing needle.
  • Put it in a baking dish and cook at low temperature for 3 hours. Baste frequently with the juices when cooking.
  • When finished, put on a large warm dish and serve warm with the skimmed cooking juices.
