Technical stages for Goose with Chestnuts :
- Peel the chestnuts and them in the with the bay leaf.
- Fill the goose with the chestnust. Close it with a trussing needle.
- Put it in a baking dish and cook at low temperature for 3 hours. Baste frequently with the juices when cooking.
- When finished, put on a large warm dish and serve warm with the skimmed cooking juices.
